HEMC 21 - soy bread
to HEMC 21 ,
this month hosted by qalamana , I created a pan with soy.
unfortunately it has not gone well. I do not think I have enough time soaked soybeans. bread outside is beautiful, but inside is very compact. can eat it yet so I leave the recipe.
soy bread
TVP 150 g
100 g fine whole wheat flour
200 g wheat flour 360 g
warm water 10 g salt 90 g sourdough
7 g fresh yeast 1 tablespoon gluten
soaking soybeans in hot water 2 dl for half an hour to one hour. Dissolve yeast in 0.5 ml water. Mix all ingredients (except salt) mix with the food processor (Bosch MUM 8 position 1.5) four minutes. add salt and mix another 8-12 minutes (Bosch MUM 8 position 2). let stand for 60-90 minutes depending on temperature, until you have weighed well.
form the bread. let stand 45-60 minutes.
preheat the oven and tray to 230C. put it in oven with steam. after 10 minutes lower the temperature to 200C bake 50 minutes more.
