HEMC happy holidays 27 - traditional cannelloni with boletus
host the current HEMC - Ivana of My littel Things - invites us to prepare cannelloni.
'm a fan of Italian cuisine so prepraré filled cannelloni with a classic and bechamel. I have
from accessories to make pasta for my kitchen robot Bosch MUM 8, dough is easy and nothing worked. clear the dough is made in my kitchen too. ;-)
pasta
200 g flour 100 g fine wheat semolina
3 eggs (m)
1.5 tbsp olive oil
mix all ingredients and knead with the hand mixer ( Bosch MUM 8 position 2) 7 minutes. put in a bowl with lid and leave at least 30 minutes in the refrigerator. shape with the attachment for lasagne.
NEXT prescription needed for only 1 / 3 of the dough, with the rest made tagliatelle , which can be dried without problems.
classic cannelloni with porcini
recipe for 2 people
filling:
1 tablespoon olive oil 25 g pancetta
250 g minced meat (mitdad pork / beef)
15 g mushrooms, dried
1 / 2 onion
50 g celery, chopped fine
1 carrot, grated
basil and parsley, chopped
1 / 2 dl red wine 200 g
passata (tomato cooked and preserved)
nutmeg salt pepper
put mushrooms soaked in water heat about 30 minutes. drain and chop fine.
sauté pancetta, mushrooms, onions, celery and carrots about 10 minutes, add the meat to move until have color. Add the wine and let it evaporate a bit.
at the end add the passata, place the herbs, salt and pepper and let simmer about 30 minutes.
cool.
Meanwhile prepare the bechamel :
25 g butter 1.5 tbsp flour 250 g
1 dl milk cooking cream Salt
nutmeg pepper 3 tablespoons Parmesan
add melted butter flour, add milk and cream is always stirring, seasoning. cook about 5 minutes, add the cheese.
prepare the container with a little butter and bechamel base.
roll the dough with the filling.
fill the tray with the cannelloni,
pour the bechamel.
put the cannelloni in a hot oven (200C) for about 35-40 minutes.
Buon appetito, as the Italians say!

The two last editions of the World Day of Bread (World Bread Day) were great and were a great success. Thanks to all participants I present two baskets filled with breads from all over the world!
As is pleased to announce the Third Edition of the World Bread Day , which will reopen on October 16 .
World Bread Day, an event created by The International Federation of Bakers (UIB) wants to provide the opportunity to talk about bread and bakers, discover its history and its importance to the couple that his future.
Let's bake and talk about bread again today! Everyone is welcome!
The theme is open, just bake a bread with or without yeast, use sourdough, experiment with different flours, add some seeds ... ... As you like best!
You never have baked a bread? Well try! It's easy and once you've smelled fresh bread in your kitchen you can not quit. Do not know what kind of bread do? No need to reinvent the baguette! ;-) You can find inspiration here , here and here. Do not forget to mention that blogger was your inspiration.

HEMC 24 - peach mousse pot in Tarifa

peaches are a of my favorite fruits. as it begins to get hot I made a light mousse (no calories) and refreshing.
peach mousse for 6 small molds
peaches 130 g 50 g icing sugar 250 g mascarpone
or quark
2 teaspoons sugar 2 tablespoons vanilla
2-3 peach liqueur neutral gelatine leaves
1 dl cream, mounted
Soak gelatin leaves.
crushed peaches and sugar, add the mascarpone and mix well.
heat the liqueur, remove from heat and add the soaked gelatine to remove to dissolve completely. pour over the cream. put in the fridge for 20 minutes or until the edge of the cream is set. Now is the time to add the whipped cream with outflanking of abja-up. pour the mousse into 6 smaller molds. put in the fridge for three hours. serve with peach cubes soaked in peach schnapps and whipped cream.

make ice cream at home is not difficult. is difficult to keep the ice cream in the freezer. there are some tricks and avoid the ice cream is very hard with many ice crystals. one is to add a little oil and other used l' invert sugar.

unfortunately it has not gone well. I do not think I have enough time soaked soybeans. bread outside is beautiful, but inside is very compact. can eat it yet so I leave the recipe.
soy bread
TVP 150 g
100 g fine whole wheat flour
200 g wheat flour 360 g
warm water 10 g salt 90 g sourdough
7 g fresh yeast 1 tablespoon gluten
soaking soybeans in hot water 2 dl for half an hour to one hour. Dissolve yeast in 0.5 ml water. Mix all ingredients (except salt) mix with the food processor (Bosch MUM 8 position 1.5) four minutes. add salt and mix another 8-12 minutes (Bosch MUM 8 position 2). let stand for 60-90 minutes depending on temperature, until you have weighed well.
form the bread. let stand 45-60 minutes.
preheat the oven and tray to 230C. put it in oven with steam. after 10 minutes lower the temperature to 200C bake 50 minutes more.
