Zimtsterne China (cinnamon stars)
how exciting! I have the honor of opening the first window Advent Calendar Noema of Intercultural and Kitchen . not to say he wanted to "fill in" the window with something special - Zimtsterne. a star-shaped cookies spiced with cinnamon.

Zimtsterne (cinnamon stars)
3 egg whites 1 pinch salt
250 g powdered sugar 2 tablespoons Kirsch
1 and 1 / 2 teaspoons ground cinnamon 350 g ground almonds
beat the egg whites with salt until stiff and add the icing sugar and Kirsch gradually. save 1 dl (approx.) of the egg whites to the bathroom.
incorporate the almonds and cinnamon to egg whites. cover the dough with plastic wrap and let stand 1-2 hours in refrigerator.
sprinkle the top with sugar. flatten the dough with your hands and stretch with a roller, to leave a thickness of 1 cm. cut with a cortapasas stars that we will have passed before the sugar to prevent sticking to the dough and have the stars close together on a tray.

preheat the oven to 190 º C and bake for 15 minutes.

bread recipe for 1 sourdough *
145 g flour 15 g 15 g wheat sourdough
120 g water mix all ingredients and let stand at room environment for about 10-12 hours.
mass
450 g flour
50 g flour 14 g fresh yeast dough
14 g salt * 280 g water
dissolve yeast in water 0.5 dl. Mix all ingredients (except salt) mix with the machina (position 1) 4 minutes.
add salt and mix another 6 minutes (position 2). let stand for 60-75 minutes depending on temperature, until you have weighed well.
do 1-2 stretch & fold during the fermentation time (30 minutes).
form pan with seam let up let stand about 15 minutes. a roller to press over the loaf. stand for 30 - minutes
preheat the oven and tray to 240C. put them in oven. cooking 30 minutes approx.

I have a garden and do a few weeks ago I had an abundance of zucchini. now I have more because the plants suffer from mildew or mildew, do not know what it is. :-(
but of course I took advantage of the abundance and the following recipe for the current HEMC .

carry everything (liquid and vegetables) to a boil. cook for 2-3 minutes.
put in a sterilized bottle tightly closed.
so you can keep about 6 months.

Middle Eastern cuisine I love muchissima. for this HEMC prepared a pita, hummus and baba ganoush. evidently stuffed pita puree, tomatoes and grilled chicken.
pita
250 g flour 7 g fresh yeast 1 teaspoon sugar
145 g water 1 teaspoon salt
dissolve the yeast in a little water along with sugar.
mix the flour with salt and add olive oil, water and yeast, knead until it is smooth. bun let rise until doubled in volume, approx. 1 hour.
divide the dough into 6 parts and form the buns buns let rise for 10 minutes.
preheat the oven and tray to 250 co more is possible.
stretch each muffin with a round of 1 / 2 cm. thick.
pitas cook 3 to turn about 4-5 minutes, until puffed slightly.
do the same with the other 3. Hummus
125 g cooked chickpeas (and a bit of broth) 3 tablespoons tahini
1 clove garlic,
2 tablespoons lemon juice, olive oil
1 sprig coriander, paprika
spicy cumin black pepper and salt
put all the ingredients (save this cilantro for decoration) into a bowl and blend in a blender or food processor to desired texture. Baba ganoush
1 large eggplant 2 tablespoons tahini 1 clove garlic
1 tablespoon lemon juice 1 tablespoon
ground cumin 2 tablespoons olive oil red pepper
black pepper and salt wash
roast until eggplant is very soft, cool in a bowl closed. remove the skin and put all ingredients in a bowl and blend with the blender or food processor to desired texture.

mini apple pies
1 plate body (also Lidl)
fill
25 g sugar 1 tablespoon water 2 blocks
1 / 2 tablespoon lemon juice 1
/ 4 teaspoon cinnamon
1 1 / 2 tablespoon raisins in rum
50-100 g ground almonds 1 / 2 tablespoon honey
peel and grate apples. add lemon juice.
caramelize the sugar and water, add the grated apples. cook until the caramel is diluted. let cool. Once the mixture is cooled, pour the liquid.
mixing apples the rest of the ingredients. the filling should be quite dry.
cut the pastry into 6 circles large and 6 small circles (tapas). line the ramekins with large circles, pour the filling and cover with small circles.
bake at 200 C in preheated oven for 35 minutes. cool in the ramekins 7 minutes, unmold. serve warm or cold.

as you know I am Swiss and Switzerland is no sea so we are not very accustomed to eating seafood etc. yet I love it.
the first time you buy a whole squid did not know how to clean, cut and cook. while so I'm almost expert. ;-)
tagliatelle with cuttlefish with lemon
recipe for 1 person
3-4 tablespoons olive oil 3 squid
2 cloves garlic, cayenne
1 guidilla
2 teaspoon lemon peel,
grated lemon juice 2 tablespoons coarse salt
tagliatelle (recipe is here )
clean squid and cut into slices. chop the garlic, cayenne and parsley.
add oil and garlic and cayenne pepper over low heat, when they are no longer raw increase fire. add the squid, sauté about 2 minutes, add the lemon juice and skin. gues salar salt. serve with the tagliatelle.
