HEMC # 35 - zucchini curry sour
I have a garden and do a few weeks ago I had an abundance of zucchini. now I have more because the plants suffer from mildew or mildew, do not know what it is. :-(
but of course I took advantage of the abundance and the following recipe for the current HEMC .
bittersweet zucchini curry
1 kg zucchini 150 g onions 40 g salt

3 dl white wine vinegar 3 dl water
250 g sugar 2 tablespoons curry

wash and cut zucchini into thin slices 3 mm thick.
onions cut in slices as well.
calabacinces mix and onion slices and salt.
cover the bowl with plastic wrap and put in refrigerator overnight. Day 2
wash vegetables with water and drain.
mixing wine vinegar, water, sugar, curry and bring to a boil. throw vegetables.
cover the bowl with plastic wrap and put in refrigerator overnight. Day 3
sift the liquid and bring to a boil. throw the vegetables.
cover the bowl with plastic wrap and put in refrigerator overnight. Day 4
now you can try the zucchini. and are very rich!
carry everything (liquid and vegetables) to a boil. cook for 2-3 minutes.
put in a sterilized bottle tightly closed.
so you can keep about 6 months.
