DIFFERENT prepared bread with nuts and potatoes.
nut bread and potato
270 g sourdough
7 g fresh yeast 1
baked potato (+ / - 200 g) 450 g
flour 150 g wheat flour 330
g water 14 g salt
75 g walnuts, chopped coarse
75 g hazelnuts, chopped coarse
peel and mash potatoes. Dissolve yeast in water 0.5 dl. Mix all ingredients (except salt) mix with the machina (position 1) 4 minutes. add salt and mix another 6 minutes (position 2). let stand for 60-75 minutes depending on temperature, until you have weighed well. to 1 stretch & fold over after 30 minutes.
form the bread and let stand 60 minutes
preheat the oven and tray to 240 C. put it in oven with steam. then 10 minutes lower the temperature to 220C and cook about 10 minutes to lower the temperature to 200C and cook for 20 minutes.
